Start with the product you need to sell

A capacity enquiry should begin with finished product, pack size and daily dispatch target. A washer specification describes incoming vegetables; a filler specification describes packaged product. Those figures cannot be compared directly. Write down the raw material, the preparation steps, the finished texture and whether your daily target means raw input or saleable output.

For a business making several products, prepare a separate production schedule for each. The same cutter may handle carrots in the morning and potatoes later, but blade changes, washing and material handling use time between runs.

Calculate a realistic hourly requirement

Use this planning calculation: required saleable output per hour = daily saleable output ? productive hours. Productive hours exclude planned cleaning, setup, breaks and changeovers. For example, an illustrative target of 1,200 kg per day over six productive hours requires an average of 200 kg of saleable product per hour. This is a planning example, not an AREIUM machine rating.

If a measured preparation trial gives 80% usable yield, that example requires 200 ? 0.80 = 250 kg of raw input per hour at the preparation stage. Replace this assumed yield with your own trial result. Do not apply the same yield to every fruit, vegetable or recipe.

Convert batch capacity into output

A 100 kg batch vessel does not automatically produce 100 kg every hour. Its cycle includes loading, processing, discharge and any between-batch cleaning. If an illustrative full cycle takes 90 minutes, nominal output is 100 ? 60 ? 90, or approximately 67 kg per hour before losses and unplanned delays.

Ask whether a quoted vessel capacity is total volume, working volume or product mass. Request minimum and maximum working batches, plus cycle times for your actual product. A line with two alternating vessels also needs enough transfer and filling capacity to benefit from that arrangement.

Find the slowest stage in the line

List each stage and its practical throughput: washing, peeling, cutting, processing, transfer and packing. Increasing the washer size will not increase finished output when the cutter or packer is already the limiting stage. Compare the batch washer, vegetable cutter and downstream equipment as one production system.

Ask the supplier how the stages connect and where intermediate holding is needed. Define who moves the product, how long it waits and how the equipment is cleaned between products.

Compare a startup configuration with an expansion plan

A smaller modular installation can help a business establish its product range before adding more automation. The FAO guidance on planning processing units recommends evaluating investment against the specific project and considering modular equipment. Apply that principle by asking which machine would need replacement first if demand doubled.

Reserve space and connection points for expansion. Ask for separate quotations for the current production target and the proposed future target, with labour requirements and scope exclusions shown for both.
