Introduction

Plan fruit jam machinery around smooth or fruit-piece recipes, working batch size, cooking cycles, transfer and jar filling before requesting a plant quote.

01

Define smooth jam and fruit-piece products separately

The intended texture determines what preparation equipment needs to achieve. A smooth product may use prepared pulp; a product containing visible fruit pieces needs those pieces to survive the selected preparation and mixing process. Provide a reference sample and ingredient description rather than relying only on the word jam.

A fruit jam plant enquiry should include raw material format, recipe family, finished batch mass and container size. If purchased pulp will be used, state that clearly so the proposal does not automatically include a fresh-fruit preparation section.

02

Select preparation equipment for the texture

For fresh-fruit production, define washing, inspection, trimming and any stone or seed removal duties. A fruit pulper should be assessed against the required pulp texture and separation result. Trial the varieties and ripeness range expected in normal supply.

For products containing pieces, document the accepted piece size before and after mixing. Do not assume that a machine intended to make smooth pulp is also the correct way to preserve visible fruit pieces. Ask the supplier to show where each ingredient enters the proposed process.

03

Distinguish working batch size from vessel volume

A vessel’s total volume does not by itself state how much of your recipe can be processed as a working batch. Ask for the proposed minimum and maximum working quantities and the basis for converting volume into product mass.

Prepare a cycle sheet showing loading, ingredient addition, cooking, discharge and cleaning. As an illustrative schedule, a 150 kg accepted batch completed every 90 minutes averages 100 kg per hour before interruptions. This is a planning calculation, not a promised cooking time or AREIUM specification.

04

Trial transfer and filling with the intended product

Define how cooked product reaches the filler and which equipment is included between the two. Test the proposed arrangement with the agreed consistency and any fruit pieces. Check the actual jar opening, fill quantity and closure, rather than accepting an unrelated container demonstration.

Record accepted fills and any manual adjustments or stoppages during the trial. The process specialist should establish product-specific treatment and filling requirements. Equipment selection and a visually acceptable sample do not establish a validated shelf life.

05

Compare cleaning and recipe changeover

Ask to see access to the vessel, agitator, outlet, transfer path and filler contact parts. Record which components need removal and whether special tools are required. Include the site team that will carry out cleaning when reviewing the proposal.

  • Fresh fruit or purchased pulp route.
  • Smooth texture or retained piece specification.
  • Working batch and complete cycle basis.
  • Heating and transfer equipment included.
  • Jar sizes, closures and filling demonstration.
  • Cleaning procedure and change parts.
06

Build the quotation around the production range

List the planned flavours, pack sizes and sequence of production when contacting AREIUM. Identify whether all products must run on the same line and which changeovers will occur most often.

The capacity sizing guide supports the batch calculation, and the quotation checklist helps compare the complete scope. For background on fruit processing routes, consult the FAO processing introduction.
